Twitter is ALIVE with this post, and it’s nice to see so many people saying “OMG I never knew!”. I have a friend who’s not tolerant of gluten and wheat (as in he takes no shit from it), so I can relate and understand the response.

You know these meatballs are dirt cheap at IKEA right?
It’s also super nice to see the normal side of a poker celebrity, taking time out of their crazy ass schedules to impart a little home cooked wisdom on the rest of us.
As a side note: don’t ever feel sorry for me for not being a celebrity, I’m famous in the minds of both myself and my mother.

Annie Duke’s Awesome Gluten Free Meatball recipe

I am posting the Turkey Meatball recipe because a bunch of people have been asking for it. So here it is!
- 1 lb ground turkey
- ¼ pound ground pork
- Chopped garlic to taste (about a teaspoon)
- I/4 to ½ cup finely chopped mushrooms
- ½ a yellow onion, chopped
- 1 cup spinach cut into ribbons
- 3 large basil leaves, cut into fine ribbons
- Salt and Pepper to taste
- 1 tsp olive oil
Heat olive oil in pan. Sautee onion until just translucent. Add mushroom and garlic and cook down about 3 to 5 minutes more. Add spinach and basil and cook until well wilted, about 2 more minutes. Remove from heat and let cool.
Put turkey and pork in a bowl. Add cooled mixture and salt and pepper and mix lightly until all the ingredients are well incorporated (do not overwork the meat or it will cook tough).
Form mixture into balls and place on a cookie sheet. Bake in a 350 degree oven for about 10 to 15 minutes. Take out of oven and finish in a sautée pan until lightly browned.
